Vinaigrette, You Say?

It's not, as Sandra Lee of Semi-Homemade Cooking with Sandra Lee would say, 'vinegar-arette'. Silly woman. I had some oven-dried (as opposed to sun-dried) roma tomatoes that I have been itching to use. I finally decided to make a Sun-Dried Tomato Vinaigrette.


Here we have the ingredients: 1/2 of a shallot, finely chopped, 2 dried roma tomatoes, 1 clove garlic, crushed and minced, 1/4 cup red wine vinegar, 2/3 cup dry white wine, 1/4 teaspoon salt, 1/8 teaspoon ground black pepper and 1/4 cup olive oil.


After whisking the olive oil into the other wet ingredients, add in the dry ingredients.


And we have our sun-dried tomato vinaigrette. A drizzle of honey can be added if you want a hint of extra sweetness.

Can I tell you how hard it was to find a recipe for this that made more than just one serving size?
