Salad Dressing and a Cat

I needed to make more salad dressing so we can have salad with our slow cooked Mustard Beef Short Ribs for dinner tonight.


CELERY SEED DRESSING

This recipe comes from my mother. Grating the onion releases the onion juices and gives a different flavor to the recipe.

1/4 c. grated onion
1 c. sugar
2 tsp. salt
2 tsp. dry mustard
1/2 tsp. paprika
1/2 cup white vinegar
1 1/2 cups salad oil
1 tsp. celery seed

Combine first 6 ingredients; mix well. Add oil gradually, beating constantly. Add celery seed; beat well. Always add celery seed last. Yield: 2 cups.






The ingredients. I decided to alter the recipe a bit today, so white wine vinegar replaces the white vinegar and 1 cup of the salad oil was exchanged for Extra Virgin Olive Oil.







As this dressing separates easily, I decided to put my old blender to work, making this dressing. Oh my, the poor thing may not be much longer for this world.





The dressing is finished and ready to be bottled. Cover tightly and store in the refrigerator.
