Many Happy Birthday Wishes
Today is a very special day here in the Foodie household
as the Foodie Daughter is celebrating her 21st birthday today.




No, I didn't make a cake or even cupcakes for the daughter, but I did make brownies.


Once again I am making my adaptation of Ina Garten's Outrageous Brownies.
Brazen Brownies
2 sticks unsalted butter
3 cups plus 2 tablespoons semisweet chocolate chips, divided
3 large eggs
1 tablespoon leftover coffee
1 tablespoon real vanilla extract
1 cup plus 2 tbs. sugar
½ cup all-purpose flour
½ tablespoon baking powder
½ teaspoon kosher salt
1 tablespoons flour, for coating the extra chips


Preheat oven to 350 degrees F.
Grease and flour a 9 x 13 baking dish.

Melt together the butter, 3 cups chocolate chips in the microwave. Cool slightly.

Stir together the eggs, coffee, vanilla and sugar.


Stir in the warm chocolate mixture and cool to room temperature.



Stir together ½ cup of the flour, baking powder and salt.
Add to cooled chocolate mixture.





Toss the 2 tablespoons chocolate chips with 1 tablespoon flour to coat.

Then add to the chocolate batter.





Pour into prepared pan.

Bake for about 15 minutes.

Rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough.

Bake for an additional 15 minutes, or until tester just comes out clean.

Do not over-bake!






Cool thoroughly, refrigerate well and cut into squares.







These are very fudge-y brownies and are always a hit.

That chocolate looks awesome.

Thanks Rosie! I had a fun day with tailgating though. Mommy and I can try to do the 21 shots next weekend in French Lick though. :)
