Twice Baked Potatoes
Well, what do you know?
I feel like talking about Twice Baked Potatoes today.


Our ingredients are:
4 Yukon Gold potatoes
approximately 1/3 cup sour cream
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh chives, chopped
1 tablespoon bacon, chopped
1/4 cup cheddar cheese, grated


Clean the potatoes and prick the skins.
Either bake the potatoes in the oven at 425 degree for 45 minutes or in the microwave for 8 minutes until almost completely cooked through.
Slice each potato lengthwise and scoop out the insides with a spoon.
Put the scoopings in a bowl and add the sour cream, salt and pepper.
Adjust seasonings as needed.
Mix together and spoon into potato shells.
Bake at 400 degrees for 15 minutes.



Or until cheese is melted.



Serve with steak and enjoy.

The dear husband gave this four out five stars since he wanted more potatoes.
Same for the Foodie Boyfriend.
The Foodie Daughter didn't really care for the sour cream taste, so she gave this four stars.
I thought the flavors were just right and the serving size just right, so I gave this five stars.

I love twice-baked potatoes. Haven't made them in a long time, so I'm putting this on my to-do list.
